Stuffed Zucchini with Ground Meat and Cheese

The texture of the zucchini after being roasted will still have a nice bite that stands up to the cheesy gooey filling inside. It’s a perfect dinner for you to have when you want something a little out of the ordinary. These shells are stuffed with meat. The best thing is that you can use any meat that you want, as long as it’s ground. Beef, chicken, lamb, whatever you want!

The Preparation:
3 medium or 4 small zucchini the seeds will be removed
300 g ground meat pork or beef
1 medium egg
½ medium onion diced
½ tbsp butter
50 g Gouda cheese grated
30 g Mimolette cheese grated (optional)
40 g Mozzarella grated
2 tbsp Parmesan cheese
The Execution:
1. Cut your zucchini in half, length wise.
2. Using a spoon or melon-baller, scoop out the zucchini so it becomes a shell for the fillings. Chop up the zucchini that you scooped out of the skins.
3. In a pan saute your butter, onions, and scooped zucchini medium heat.
4. Mix in your spices.
5. Turn the heat up to medium-high then add in the meat and the egg and mix well.
6. Once the meat has cooked, mix in your cheese, cooking until it melts. Divide the cooked zucchini and meat mixture equally among the zucchini shells.
7. Top with some more cheese and place into a casserole dish.
8. Bake at 180°C for 30 minutes.
